Camping Tacos

Honestly, tacos are one of my favorite things to eat while I'm camping. But sometimes they can seem like a lot of work! Over time, I've found that prepping beforehand really helps to save on cleanup. I recently heard about this awesome easy-cleanup taco meal called the "walking taco" that I wanted to share with you all! As long as you prep your extra toppings in containers before you go, cleanup for this one will be a breeze.

The Walking Taco

The walking taco is a super simple, yet super tasty recipe that is a cross between a taco and a burrito bowl. Except instead of a bowl you actually use a bag of corn chips! You can use meat, beans, or whatever your preferred taco topping is. Then you just add in some cheese, shredded lettuce, tomatoes, sour cream, and anything else you would normally put on your taco. You can make this as simple as you like.

Ingredients

  • Ground beef or turkey
  • Cooking oil
  • Taco seasoning
  • 1 jar of queso
  • Sour cream
  • Salsa
  • Shredded lettuce
  • Tomato
  • Single-serving bags of corn chips

Directions

  1. Season the meat with taco seasoning (about 2 tablespoons per pound of meat). Heat oil in a skillet or pot and add the seasoned meat.
  2. While the meat is browning, smash up the corn chips inside of their bags. Once the meat is browned, open up each bag and add a large scoop of the taco meat.
  3. Top with your favorite toppings, grab a spoon, and enjoy your walking taco!

Build Your Own Taco

If you’re travelling with a larger group, you might consider doing a more traditional taco-bar style meal. There are more dishes involved, but it’s perfect for a nice sit-down meal with a large group. For a vegetarian option, you can always get some black beans and heat them up with taco seasoning. This is also a good option if you don’t want to have to keep the meat refrigerated!

  • Ground beef or turkey
  • Shredded lettuce
  • Tomatoes
  • Onion
  • Salsa
  • Guacamole
  • Shredded cheese
  • Taco seasoning
  • Cooking oil
  • Tortillas or hard-shell tacos

Directions

  1. Season the meat with taco seasoning (about 2 tablespoons per pound of meat). Heat oil in a skillet or pot and add the seasoned meat.
  2. While the meat is browning, prepare all the tortillas and toppings with serving dishes and plates.
  3. Once the meat is browned, fill up some tortillas or shells and let everyone line up to top off their tacos. We guarantee you’ll have plenty of happy campers!
